Celtic Celebration Cooking Demonstration: Dingle Pies (UPDATED TIME)

Celebrate Celtic heritage through food during the Wheeling Celtic Celebration. Wheeling Heritage will host a dingle pie cooking demonstration on Saturday, March 12 at NOON in their conference room, located on the second floor of the Wheeling Artisan Center.
Dingle, or Kerry, pies are savory lamb pies, a specialty of the Dingle Peninsula in southwestern Ireland. It’s a traditional savory pie made with lamb filling and a crust made with lard from mutton or lamb.
At this workshop, Chef Melissa Rebholz will show attendees how to use lard in savory pie crusts and other techniques for creating the perfect pie. The lamb used in Chef Melissa’s dingle pie will utilize local, heritage-breed lamb from The Ross Farm.
Drew Ross Manko, owner of The Ross Farm in Washington, PA, will discuss heritage breed farming techniques that he uses to help preserve the characteristics of farm animals from a bygone era, before industrial agriculture became a mainstream practice.
Attendees will receive a sample of dingle pie, as well as a recipe card to take home with them.
Melissa Rebholz is the chef and owner of Midge’s Kitchen in Downtown Wheeling. She studied Culinary Arts in New York City and spent the following 10 years growing food and cooking on organic farms and in kitchens in California, Tennessee and Alabama. She moved to Wheeling in 2019 to be closer to her family in Buffalo, NY. She is passionate about gardening, sourcing food from local farmers and teaching others to cook good food at home.
